Homemade Lechon


The Process of making a Lechon

1.    Slaughter the pig (fresh from the Kalinga Farm)
2.    Place seasoning and flavoring
3.    Skewering on a large stick (in the Philippines, we usually use a bamboo)
4.    Cooking it in a pit filled with charcoal
5.    The bamboo is turned in rotisserie action
6.    The pig is roasted on all sides for several hours

The process of cooking and basting usually results in making the pork skin crisp. This is a distinctive feature of Lechon.
